Annual aromatic herb with delicate feathery foliage, widely grown for its fresh leaves and seeds used to flavour fish, salads, pickles and many traditional dishes.
Dill (Anethum graveolens) is a popular annual herb in the carrot family, valued for its finely divided green leaves and aromatic seeds, both of which have a distinctive fresh, slightly anise-like flavour.
Fresh dill leaves are commonly used with fish, seafood, salads, soups, potatoes, yoghurt-based dishes and sauces, while the seeds are prized for flavouring pickles, vinegars, bread and spice blends. Its bright yellow flower umbels are also highly attractive to bees, butterflies and other beneficial pollinating insects.
Botanical and ethnobotanical literature also mentions dill for its traditional medicinal uses, in addition to its culinary and ornamental value.
How to sow the seeds
Sow directly outdoors from early spring to late summer, as dill develops a long taproot and does not transplant well. Sow the seeds about 1-2 cm deep, leaving approximately 20-30 cm between plants.
Grow in full sun in fertile, light and well-drained soil. Keep the soil moderately moist and make successive sowings every few weeks for a continuous harvest of fresh leaves. Germination usually takes 10-20 days.
